Sweet Chili Sauce
This is a Thai style sweet chili sauce similar to Thai Chili sauce you buy in bottles can be served with any meat, fish, chicken or seafood and it is just perfect for serving with Fishcakes, and it has to be the easiest recipe I have ever come across.

  1. Place all the ingredients in a suitable pot except for the cornflour.
  2. Bring the pot to boil then allow to simmer and reduce by approximately half.
  3. Mix the cornstarch with a few tables spoons of water to make fluid and whisk into the boiling chili sauce.
  4. Stir back to the boil and cook for a few minutes to allow the starch to fully cook out.
  5. Add water to bring the sauce to the correct consistency you want, the sauce will thicken slightly as it cools.
  6. When fully cooked remove from the stove and allow to cool, than decant into a suitable bottle or container.
