Bun Wash

This simple bun wash is suitable for many different types of buns and sweet doughs, this bun glaze give a nice shinny coat to buns by simply brushing over the hot buns soon as they come out of the oven while still hot, although boiling anything with gelatin is unusual this bun wash works fine and creates a high gloss especially when the buns are brushed twice. The addition of the Apricot jam is optional but it gives a slight golden glow to the bun wash.

Ingredients
- 1.25 cups Caster Sugar
- 160 ml Water
- 1 tsp Gelatin Powder
- 2 tbsp Apricot Jam

Instructions
- Mix ingredients in a suitable stainless steel pot and bring to the boil, strain and allow to cool,
- Keep warm and brush on to hot buns soon as soon as they come out of the oven. brushing twice creates a higher gloss finish
